Foodie Tips

As we wander about, some new and interesting recipes come to hand.

Cooking in our van and on the BBQ generally take our fancy but the occasional fire pit adventure happens when with friends.

Mouth Watering BBQ Steak Burger

Ok so the day ends, you are tired and hungry.

You don't want to spend hours cooking so a burger is a great way to top up the fuel and not take all night.

Prep and cook time around 30 minutes.

How I get mine ready.

Set up the BBQ and kitchen for cooking and food prep. If you have a fancy setup and don't need an external BBQ, time saved.

Get the meat, tomatoes, onions on the prep area.

Slick the meat so it is not too thick, this will help cook times and make them easier to eat.

Slice the tomatoes and then the onions so your tomatoes stay free of onion flavor.

Start to cook the onions in a pan, a little olive oil helps with flavor and reduce sticking. Keep the heat at medium, too hot all you do is burn not cook.

Not the buns, cheese and lettuce come out.

Slice the buns, butter if you like, add sauce of your choice, lettuce and cheese. By putting the sauce directly on the bun it does not run all down your arm.

When the onions are glazed, start cooking the steak. I leave the onions in the pan to add flavor to my steak.

As I like my steak rare, only a short cook time then on to the bun, tomato on top, pour a glass of your favorite and enjoy.

Easy Caesar Salad

Ok so feel like something green?

How about a salad.

The ingredients depend on what you have in the fridge or what you pre planned to bring along for just this dish.

Lettuce or spinach mix I find best. Add to a mixing bowl ( easier to add mayo )

Dice and quarter a tomato. Add to the bowl.

Add olives, red onion, anchovies, blue cheese ( gives a real boost ) red & green capsicum and any other salad items you fancy.

For each participant, poach an egg.

In your bowl add mayo and gently mix.

If you have a piece of stale bread warm it on the stove until it becomes crunchy. Chop or break into 20mm cubes.

Decant the mix into serving bowls, add the egg and bread cubes.

Pour a glass of your favourite beverage, sit and enjoy.

To further reduce the washing up, prep in your serving dishes but watch put for overflow!
